Stringer Week in Review - First Installment

So - I've been really bad about blogging lately. There just doesn't seem to be enough hours in the day - so the one thing that has been easy to give up as been the blog. However, I know many people come here to see the latest pictuers and happenings of our little boy and since he's growing like wildfire lately - I figure I'd try something new... I've kind of stolen this idea from a few of my friends blogs...but I'm going to try to highlight a few of the "big" events of each week....whether it be 1 or 10. I've also started making one new receipe each week...so each week I'll also include the new receipe and if it passes our test - I'll include it here. So...here we go...the first "Stringer Week in Review":

1). This weekend Nathan took about 90% of his naps in his crib. To many of you this might not seem like a big deal....but to us..it's HUGE. Nathan sleeps GREAT in his crib at night - we can put him down wide awake and he'll put himself to sleep with no crying. When we try to get him to take a nap in his crib (even after rocking him to sleep) during the day - he wakes up screaming....and will only go back to sleep in his swing. I'm hoping this weekend was not a fluke and this continues.. I have such ideas of the area the swing is currently at in the living room.

2). Nathan had his first experience with a baby pool this weekend. I found a cute little baby pool at Target for $5....can't go wrong!
This is way different than bath time....

I like how it feels on my feet...

Receipe of the Week:
Grilled Shrimp and Pineapple Skewers
Ingrediants:
1 lb uncooked jumbo shrimp
1/2 fresh pineapple
6 tbsp Orange marmalade
1 tbsp soy sauce
1 8.8 oz pouch cooked long grain rice
1/4 cup snipped fresh cilantro
1) Peel and devein shrimp; thread on 4 skewers. Cut pineapple in 4 crosswise slices, core, if desicred and cut each slice in quarters to make 16 small wedges. Thread on 4 skewers. in small saucepan, combine 4 tbsp of the marmalade, 1/2 cup water, and the soy sauce. Brush some of the marmalade-soy sauce on shrimp and pineapple.
2) Place skewers on rack of uncovered grill directly over medium head. Gril 8-10 mintues, turning once, until shrimp are opaque and pinepalle is heated through. Remove from heat; cover to keep warm.
3) Return remaining marmalade-soy sauce mixture to saucepan and bring to full boil; heat rice according to package directions. Transfer rice to serving bowl, stir in remaining 2 tbsp marmalade and cilantro.
4) Server skeweres with the rice and boiled marmalade -soy sauce mixture.
Serves 4.
Nutritioanl Info: Each serving: 322 cal; 3 g fat, 172 mg chol; 451 mg sodium, 49 g carbo; 2 g fiber, 25 g pro.
